Lean Beef Meal Prep in a Hurry

This Batch Ground Beef recipe is a staple in our house during the busiest of seasons. I use it to fill quesadillas for an easy lunchbox treat for the kids, to throw together a batch of enchiladas using low carb tortillas, or a quick pasta meal. It helps keep us all on track to meet our protein goals!

Batch Ground Beef

A must for busy seasons!

  • 1 Slow Cooker


  • 2-4 lbs Heartland Beef Co Prime Ground Beef
  • 2 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Onion Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Oregano
  • 1 cup Water


  • Defrost ground beef the night before.
  • Add ground beef, seasonings and water to your crock pot and break beef apart with a spatula.
  • Set slow cooker on high and cook for 4 hours. Every hour stir to break apart the beef.
  • Once finished, drain off any excess water or fat.
  • Allow to cool completely and package up for the fridge for the week. This is so versatile for busy evenings and can be turned into taco meat, thrown in pasta dishes or on top of a salad. It is a weeknight must during our busy seasons!

Strip steaks are a great way to work a steak night into your weekly routine while watching your waistline. Serve with a salad or some roasted vegetables for a complete meal! Lean Seared Strip Steak


  • Heartland Beef Co. Prime Angus Strip Steaks
  • 2 tbsp Butter
  • 1 tbsp Heartland Beef Co. House Rub


  • Heat a large cast iron skillet or Blackstone griddle to medium heat. Add butter to hot skillet.
  • Season steaks well and sear each side for roughly 4-6 minutes.
  • Cook steaks until at least 130 degrees or to desired doneness. We like ours medium rare/rare.
  • Allow steaks to rest and slice.
  • Serve with roasted vegetables or a salad for a quick and easy lean meal.

Sirloin Steak Stir Fry

Cubed sirloin steak and fresh veggies make for any easy, lean supper.

  • Heartland Beef Co. Prime Angus Sirloin Steak
  • 2 tbsp Butter
  • 1 tbsp Soy Sauce
  • 1 tbsp Honey
  • Salt and Pepper
  • 2 Cloves Garlic
  • Zucchini, cubed
  • Onions, chopped
  • Peppers, sliced


  • Heat a cast iron skillet or Blackstone griddle to medium heat. Add your butter.
  • Cook zucchini and onions first, for about 8 minuets. Then add peppers and garlic and stir fry until finished. Season with butter, salt and pepper or any of your favorite veggie seasonings.
  • While veggies are cooking, sear the sirloin steak in butter, salt and pepper until desired doneness.
  • Add honey and soy sauce to a large bowl. Add all sirloin steak cubes to the bowl and stir to coat. Serve with stir fry veggies and enjoy!

Lastly, the Big Mac Bowl. Now, I don’t eat McDonalds anymore but there are times I really miss that Big Mac that got me through college. And this meal will hit you in the nostalgia feels if you too had a small love for these things like I did. This bow is lightened up and of course made with 100% real beef! Again, ready in 30 minutes and another healthier option!

Big Mac Burger Bowls

An easy and lean way to beat that fast food craving!
Prep Time 30 minutes

  • 2 lbs Heartland Beef Co. Prime Ground Beef
  • 2 whole Eggs
  • 1/4 cup Panko bread crumbs
  • 2 tbsp Heartland Beef Co. House Rub
  • 4 tbsp Butter
  • 3-4 medium Potatoes, cubed
  • 1-2 cups Chopped romaine lettuce
  • Ketchup
  • Mustard
  • Mayo
  • Pickles
  • Tomates


  • Preheat oven to 350 degrees and roast cubed potatoes with olive oil and pink salt for about 20 minutes.
  • While the potatoes are roasting, patty your burgers and heat a large cast iron skillet on medium low heat. Add in your butter. You can also use a large griddle grill.
  • Sear burgers to your desired temperature and doneness.
  • Top with cheese if desired.

To build the Big Mac Bowls

  • Place potatoes, lettuce and burger in a bowl.
  • Add your desired toppings, pickles, ketchup, mustard, mayo, sauces and enjoy!

Big Mac Sauce

  • Add 1/4 cup mayo, 2 tbsp ketchup, a dash of pickle juice, and seasoning sauce to a jar. Stir well and top your bowl!
